Soba Noodles for Calming Inflamed Skin

We all know the feeling of acne coming on — the tight feeling underneath the skin, the slight itchiness and tenderness, then the redness and pressure. Any time I start to sense my skin getting inflamed like this, I make this quick noodle soup in 20 mins to start healing it even before the skincare products.

This is also a perfect quick weeknight dinner that requires minimal pots and cleanup!

Ingredients:

  • 1/4 cup kabocha squash, thinly sliced

  • 4-5 pieces of daikon, sliced into 1 inch pieces

  • Palm sized dried seaweed aka Kombu

  • 4-5 slices of silken tofu

  • 3 tsps dashi concentrate

  • 1.5 cups water

  • 1 bunch of soba noodles

  • Garnish with kimchi, kumquats, and the tiniest bit of chili flakes for light flavor (or omit if you can since spice can make inflammation worse)

Instructions:

  • Add 1.5 cups of water to a pot and bring to a boil

  • Drop in the dried seaweed, daikon, and kabocha squash, then let that cook for 5 mins or until the veggies become soft enough to be pierced with a chopstick

  • Remove the seaweed, then add in silken tofu and the dashi concentrate

  • Let the tofu cook for another 5 mins, then add in soba and cook for 5 mins or according to the time on the package instructions

  • Serve with kimchi, kumquats, and the lightest dusting to chili flakes
