The shift from summer to fall is one of my favorite times for a few reasons:

  1. IT’S MY BIRTHDAY MONTH (where my virgo/libras at?)
  2. Crisp air, cozy evenings, and warm soup — name a more elite combo
  3. Getting to see the leaves changing color will never cease to amaze me (even though this year I’ll have to miss the Northeast colors)

Ingredients (12)

Instructions

  1. Start by prepping your sauce, which is combining the garlic (1 tsp), soy sauce (1 Tbsp), rice vinegar (1 Tbsp), tahini (sesame paste) (1 Tbsp), bouillon powder (1 tsp), sugar (1 tsp), chili flakes (1 tsp), and roasted sesame seeds (1 Tbsp)

  2. Bring the water to a boil in a pot, then cook the soba noodles (1 bunch) according to package instructions

  3. Once the noodles are done in a few mins, take 1/4 cup of noodle water and combine with the sauce, stirring vigorously

  4. If the sauce is too loose, add more tahini (sesame paste) 1 tbsp at a time

    You ultimately want the sauce to have a semi thick texture that coats the noodles but not so thick that it’s like peanut butter

  5. Add in the noodles (1 bunch), then top with scallions, cucumber (2), and a little more sesame seeds!
