20min Dinner Idea: Savory Steamed Egg Recipe

Listen, since we’re all getting used to a world with COVID and now going out more, seeing friends more, and LIVING our lives finally, cooking at home’s gotta be quick! This one bowl 20 minute recipe is as easy as it gets. Here’s how to make this silky steamed egg with a delicious dumpling inspired filling:

Ingredients:

  • 2 eggs + 1.5Xs vol of water

  • 1/2 lb ground pork

  • 7-8 pieces of frozen shrimp, defrosted

  • 1 tsp oyster sauce

  • 1 tsp shaoxing wine

  • 1 tsp sesame oil

  • Diced whites of 1 scallion - keep the greens for topping later

  • Pinch of salt and pepper

  • Serve with a drizzle of soy sauce and sesame oil

Instructions:

  • Chop the defrosted shrimp into tiny pieces, taking about 2-3 mins to chop

  • Combine with the ground pork, oyster sauce, wine, sesame oil, scallion, salt and pepper

  • Whisk well until the paste comes together • Place the combined mixture in a ball into a steam proof bowl

  • Meanwhile bring a pot of water to a boil

  • While waiting, whisk together the eggs, measure out the water, then whisk the water into the eggs

  • Once the water is boiling, place a steamer basket on top, pour the mixed eggs into the bowl with the meatball and then try removing as much of the bubbles as possible

  • Cover the bowl with aluminum or plastic wrap, with a few holes poked in to allow steam to come through

  • Steam for 12 mins, until just set

  • Serve with a drizzle of soy sauce and sesame oil to help flavor the egg

  • Enjoy with a big bowl of rice!
