JianBing AKA Chinese Crepes(煎饼)

JianBing is a classic street food, usually eaten for breakfast. It’s found everywhere in China and a childhood favorite. It’s been hard to find a version I really like in the states so I thought why not make it at home!

Instructions:

  • For the Dough:

    • 1 cup flour

    • 1/2 cup + few more tbsp of water

    • 1 tsp salt

    • 1 tbsp oil

  • For the filling

    • 1/2 lb ground pork

    • 1/4 cup chopped kimchi

    • 1-2 fried wonton wrappers or egg roll wrappers

    • 1 tsp ground ginger and garlic each

    • 1 tsp shaoxing wine

    • 1.5 tsp soy sauce

    • 1 tsp sugar

    • 1 scallion chopped

    • Sprinkle of black sesame seeds

    • 1 egg, beaten

    • Pinch of salt

Instructions:

  • Mix together flour and water bit by bit until a shaggy dough forms. Add a few tbsps of water at a time until the dough starts to form a ball and no dry bits of flour remain.

  • Knead the dough for about 5 mins, drizzle on some oil, then cover and let it rest between 20-40 mins (longer the better)

  • For the filling, mix together the ground pork, garlic, ginger, wine, soy sauce, and kimchi, then brown on a hot skillet until crisped.

  • Once the dough is ready, divide it into 2-4 pieces, depending on how big you want yours!

  • Place on a warm skillet, add on sesame seeds, scallions, a little tsp of oil, and salt.

  • Pour on the beaten egg and let it cook until just slightly set.

  • Add in the pork kimchi mixture, then once the egg is no longer wet, add in the crisped wonton or egg roll wrappers.

  • Roll it up, and serve with chili oil.
