Honeynut Squash Pasta

DAY 3️⃣ OF EASY DINNER IDEAS: Honeynut Squash Pasta

The first time I heard of honeynut squash was in high school after reading @chefdanbarber ‘s book. He was talking about the relationship between chefs and farmers and how both could work together to create better tasting more sustainable ingredients, and used this squash as an example!

Imagine if farmers could breed a better tasting…beet 🥲 Anyways here’s the recipe ⬇️

Ingredients:

  • 2 honeynut squash

  • 4-8 garlic cloves (8 for them garlic girls)

  • 1/2 diced onion

  • 1/4 hot pepper optional

  • 1 tbsp salt and pepper

  • 1 tbsp of chopped parsley and cilantro each

  • 1.5 cup pasta water

  • 1 tbsp honey

  • 1 tbsp soy sauce

  • Pasta

  • Used Parmesan, salmon flakes, and furikake for toppings 😋

Instructions:

  • Steam honeynuts for about 10-15 mins or until soft.

  • Meanwhile start boiling water for the pasta.

  • To a pan, add diced onion garlic and herbs. Sauté them until onion has softened.

  • Add pasta to boiling water and start the timer.

  • Add in the honeynut squash flesh to the onions and garlic herb mixture and mix thoroughly.

  • Add about 1/2 cup of starchy pasta water to thin out and keep adding more until it reaches a tomato sauce consistency.

  • Add the honey and soy sauce, then season with salt and pepper to taste.

  • Lastly toss in the pasta.

  • Top with whatever you’d like, but I recommend salmon flakes, furikake, and parmesan
