Daikon radish has been used in traditional Chinese medicine for centuries for its many benefits, including its ability to calm inflammation in the skin! But how is radish considered anti-inflammatory for the body?

  1. Start by cutting the daikon radish (1 piece) into 1 inch pieces and peeling

  2. In a separate bowl, rehydrate the dried shiitake mushrooms (1–2) and maitake mushrooms (1–2) by letting them soak in some boiling water for 10 min

  3. Add the radish (1 piece), dried mushrooms (1–2), and kombu (1 piece) to a pot and add in both the water from rehydrating the mushrooms & the water (1 cup) we’ll be using to cook it all

    Make sure you’re using just enough water so that it covers everything

  4. Bring to a boil, then let it simmer for 20-30 mins or until the radish is soft enough for a chopstick to easily pierce it

  5. Add in soy sauce (1 Tbsp) and the goji berries (1 tsp) and let everything simmer for another 15-20 minutes

  6. Lastly, remove the daikon and reduce the leftover water down by 1/4 to create a flavorful sauce
