High protein diets can involve as much or as little protein powder as you’d like. I’m still on my journey of finding a protein powder I can stand (though Boba Protein has pretty much won me over), so in the meantime my kitchen has been a test zone for discovering crave worthy high protein meals, snacks, and bowls. Recently, my latest test subject has involved bulgogi and a bunch of dumpling wrappers…

And thus, the “protein” dumpling was born! A fun little snack, perfect vessel for any protein you have on hand, and can be packed with more fiber if you’re using spinach dumpling wrappers. Here’s how to make it to make 8 wraps:

  1. Start by oiling each dumpling wrapper (8) on both sides very liberally (prevents them from sticking to each other during the cooking process)

  2. Stack them on top of each other after oiling

  3. On a cutting board or flat clean surface, roll out the wrappers very thin about 2x in size

  4. Bring a pot of water to boil, then add a steamer basket on top, lined with parchment paper and the rolled out dumpling wrappers

  5. Steam the wrapper for 8 mins

  6. To a hot skillet, toss in the shallots (1) first, cooking until softened and slightly browned, then add in the bell pepper (½)

  7. Continue cooking for another 3-5 mins until the pepper is charred in some spots, then add in the hot pepper (1) for another 2-3 mins

  8. Remove from the pan then cook your bulgogi or protein of choice (1 lb), then add peppers and onions back, cooking together for another 5 mins

  9. Remove the wrappers from the steamer, then carefully peel the skins off from the pile

  10. Fill with the bulgogi pepper filling and enjoy, but they also do very well on the go

  11. Make sure to microwave before consuming if you’re taking them out of the fridge so the wrappers can soften a bit — you can also do this morning of and the wrappers will still be good by evening
